Cappuccino Cooler


Ingredients:
  • 1 1/2 cups cold coffee (try flavored coffee too!)
  • 1 1/2 cups chocolate frozen yogurt or ice cream
  • 1/4 cup chocolate syrup
  • Crushed ice
Method:
  • In a blender, combine coffee, ice cream, and syrup.
  • Pour over ice (it has to be CRUSHED ice!). 
  • Garnish with whipped topping and cinnamon, or shaved chocolate.



Mini Fried Chicken


Chicken Ingredients:
- 1 Chicken Breast
- " Tbsp Cooking Wine
- 3 Pinches Salt
- 2 Pinches Black Pepper
- Some Oil for Frying
Batter Ingredients:
- 1 Tbsp Corn Starch for Coating
- 1 Egg White
- 4 Tbsp Corn Starch
- " Tbsp Water
Sauce Ingredients:
- 2 Tbsp Ketchup
- 2 Tbsp Honey or Corn Syrup
- 1 Tbsp Sugar
- 1 Tbsp Finely Chopped Onion
- 1 Tbsp Cooking Wine
- 1 tsp Red Pepper Paste
- 1 tsp Mayonnaise
- 1 tsp Sesame seeds
- " Tbsp Minced Garlic
- " Tbsp Olive Oil
- " tsp Sesame Oil
- 1 Pinch Black Pepper

Directions:
1. Cut the chicken breast into half inch cubes. Add the ingredients for the chicken and set it aside for about 10 minutes.
2. Add 1 tbsp of corn starch to cover the chicken. That will help the batter stick better.
3. Mix all of the ingredients for the batter.
4. Put the chicken into the batter and mix.
5. Combine all of the ingredients for the sauce together.
6. Fry the chicken twice to make it more crispy.
7. Once the sauce starts to boil, cook 1 more minute on medium heat.
8. Add the fried chicken to the sauce, and mix it well.
9. Sprinkle 1 tsp of sesame seeds on top.

Plain Pulao


Fragrant and fluffy, the perfect accompaniment to any curry. The pliau rice that you generally get is pretty
flavourless, a home made dish is far superior in flavour, aroma and appearance.

Ingredients:
  • 450g basmati rice
  • 1 Medium onion, finely chopped
  • 25g Butter, plus extra to serve
  • 4 Cardamom pods
  • ½ tsp Turmeric
  • 8 Whole cloves
  • 1 Cinnamon stick
  • Pinch saffron threads
  • 2 Bay leaves
  • 600ml Vegetable stock
  • Salt
Method:
1. Rinse your uncooked rice under running water for a minute or so. Soak the saffron strands in a teaspoon
of warm water, this will help them release their colour.
2. Melt the butter in a large sauce pan and add the onion, cook for 5 minutes until softened. Add the
spices, saffron and bay leaves and cook for a couple more minutes. The spices will give a wonderful
fragrant flavour to the rice. Add the rice and stir until the grains are coated in the butter before stirring in
the stock or water and salt. Bring to the boil and then cover with a tight-fitting lid. If the lid isn't very
tight, cover the pan with aluminium foil before putting the lid on. Turn the heat down low and leave to
cook for 10 minutes before turning off the heat. Don't remove the lid; just leave the rice to continue
cooking in the pan for about 5 minutes until you're ready to serve.
3. The rice should have absorbed all the water and will just need fluffing up with a fork. Add a knob of
butter before serving.
