Corn Chowder

Ingredients:
  • 3/4 c. cashews (or 1/4 c. cashews plus 1/2 cooked millet or corn meal*)
  • 2 1/2 c. water
  • 1 tbsp. corn starch
  • 1 1/2 c. cooked corn
  • 1 tsp. onion powder
  • 1 tsp. Vege-Sal or salt
  • drop of honey
Method:
  • Blend all ingredients until smooth beginning with cashews and half the water.
  • Cook over medium heat until thickened.
  • Serve hot.
YIELDS: About 4 1/2 c.
*If using part corn meal mush or millet, increase cornstarch to 2 tbsp
